Banana Bread Brulee Cookies

Ingredients

  • cup mashed very ripe banana
  • important – not ½ cup
  • 2 tbsp melted butter
  • 3 tbsp white sugar
  • 1 tbsp brown sugar
  • ½ tsp vanilla
  • ½ cup + 3 tbsp all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • Pinch salt
  • Pinch cinnamon optional
  • 2 –3 tbsp chocolate chips optional

Instructions

  • Heat oven
  • → 350°F / 175°C
  • Line a tray.
  • Mash + mix
  • Mash the banana, then mix in:
  • brown sugar
  • melted butter
  • vanilla
  • Add dry
  • Stir in:
  • flour
  • baking soda
  • cinnamon
  • salt
  • Fold in extras
  • (chocolate / nuts etc.)
  • Scoop
  • Scoop small mounds (they spread a little).
  • Bake
  • 👉 10–12 minutes
  • They should look set on the edges, soft in the centre.
  • Cool 5 minutes
  • They firm up slightly and get that banana-bread-like crumb.
  • Add Korean Brown Sugar and torch the top
