Fiesta Brasilia: A Culinary Fiesta in Thompson Road, Singapore – December 2008

In November 2008, I had the extraordinary opportunity to work on a project that combined my two passions: food and art. Fiesta Brasilia, a vibrant Brazilian restaurant located on Thompson Road in Singapore, brought me on board for culinary journey. Opening a Brazilian Churrascaria as one of the chefs with a food styling gig that would become one of my most memorable experiences.

The Setting

Fiesta Brasilia was a lively spot, known for its colorful ambiance and energetic atmosphere. The restaurant was a slice of Brazil in the heart of Singapore, with samba music playing in the background and a decor that featured bright colors, festive lights, a giant aerial photo of the Christ the Redeemer across the wall and modern furniture. The task was to style a selection of dishes for their new menu, which was about to launch. The goal was to capture the vibrant essence of Brazilian cuisine and the festive spirit of the restaurant.

Beyond Styling: The Complete Experience

This was one of the most difficult yet rewarding jobs I’ve ever done. From the preopening of the restaurant, purchasing all the necessary equipment, to conceptualizing what the buffet would look like, every step was a new challenge. One particular highlight was creating an every changing buffet, afternoon siesta options, which added a unique touch to the overall dining experience.

Discovering Brazilian Cuisine

Throughout this experience, I not only honed my food conceptualizing skill and styling skills but also developed a deep appreciation for Brazilian food and culture. I fell in love with feijoada, a rich and flavorful black bean stew, and pão de queijo, those delightful, cheesy bread puffs. These dishes quickly became some of my personal favorites, and I often find myself recreating them at home.

Conclusion

Working on Fiesta Brasilia was a rewarding experience that combined creativity, cultural appreciation, and culinary skills. It was a joy to bring the flavors and colors of Brazil to life through styling and photography. This project not only honed my food styling skills but also deepened my appreciation for Brazilian cuisine and culture.

Looking back, I am grateful for the opportunity to contribute to Fiesta Brasilia’s culinary journey. It remains a highlight in my career and a testament to the power of food as a universal language of joy and celebration.
